Eosinophilic Oesophagitis (EoE) is the infiltration of white blood cells into the lining of the oesophagus , the pipe carrying food from your mouth to your stomach. This immune reaction causes damage and inflammation causing symptoms such as chest pain and difficulty swallowing food getting stuck in the throat.
